Our Extra Virgin Olive Oil

The extra virgin olive oil of the S.C.A. Sierra de la Pandera is a Picual from the mountain olive groves of Los Villares (Jaén), harvested at the turn of color, cold-extracted and sold by the case directly from the mill, from €6.00/liter (2025-26 campaign).

The Extra Virgin Olive Oil of the SCA Sierra de la Pandera is born in the heart of the Sierra Sur of Jaén, a region where the olive tree is part of the landscape and the lives of its people. Our cooperative, formed by farmers committed to quality and respect for the environment, produces oils that express the purest essence of the olive fruit.

Each campaign begins with the harvesting of the olives at their optimal point of ripeness. At this crucial moment, manual labor and technology come together to preserve the freshness and natural aromas of the fruit. The olives are milled on the same day they are harvested, in a controlled low-temperature process that guarantees the maximum quality and purity of the oil obtained.

The result is an extra virgin oil with a unique personality: medium green fruitiness, notes of freshly cut grass, tomato vine, and green almond, along with a perfect balance between bitterness and spiciness. Its harmonious and persistent flavor makes it a versatile oil, ideal both for daily use in the kitchen and for enjoying it raw with bread, salads, or grilled vegetables.

In addition to its organoleptic excellence, the Extra Virgin Olive Oil of Sierra de la Pandera is a natural source of health. Rich in antioxidants, polyphenols, and monounsaturated fatty acids, it is rich in oleic acid and polyphenols, hallmarks of mountain Picual. That is why it is not only a gastronomic product, but also an ally in a healthy lifestyle.

In our cooperative, we work with a clear philosophy: to unite tradition, innovation, and sustainability. We bet on respectful agriculture, on practices that care for the soil and the environment, and on offering an oil that is the pride of our land. Each bottle is a reflection of the collective effort of our members and the commitment to excellence that defines us.

If you are looking for an oil with history, authenticity, and certified quality, you are in the right place. Our Extra Virgin Olive Oil has been recognized for its stability, its freshness, and its fidelity to the typical varieties of Jaén.
