Early Harvest Extra Virgin Olive Oil

The first oil of the campaign: green Picual olive, harvested in October in the mountain olive groves of the Sierra de la Pandera and pressed the same day. Intense green color due to its high chlorophyll content, maximum concentration of polyphenols and natural antioxidants, and a fruity character reminiscent of freshly cut grass, tomato vine and fig tree. Our collaborative effort for quality in Extra Virgin Olive Oil

El Jabalcuz Cosecha Temprana is made from green picual olives harvested in October and pressed in less than 24 hours: maximum polyphenols and intense fruitiness, at €17/liter in PET and €25/liter in glass bottles, with cases available directly from the oil mill.

The Early Harvest Extra Virgin Olive Oil from the SCA Sierra de la Pandera represents the excellence and pride of our cooperative. Every year, as autumn is just beginning and the olives still retain their intense green color, our members prepare for the first harvest. At this point in the season, the fruit offers its highest concentration of aromas, polyphenols, and freshness, resulting in an exceptional oil.

Early harvesting means a lower yield, as the olives have not yet fully ripened and contain less oil. However, the result more than makes up for it: a green, fragrant, and balanced EVOO, with notes evoking freshly cut grass, tomato leaf, olive leaf, and green almond. Its aromatic complexity and persistence on the palate make it a premium product, valued by both professional tasters and lovers of quality oil.

The harvest is carried out with care, in the early days of October or November depending on the weather, and pressing takes place immediately in our modern facilities. Temperature control and cold extraction ensure that the oil retains all its sensory potential and health benefits.

Our Early Harvest EVOO is a gastronomic gem designed to be enjoyed raw: on freshly baked bread, in gourmet salads, carpaccios, or vegetable dishes. Each bottle concentrates the effort of our farmers and the commitment of Sierra de la Pandera to quality, innovation, and sustainability.

In addition, this oil stands out for its high content of antioxidant compounds, especially polyphenols, responsible for its intense flavor and health properties. It is an oil that not only shines on the plate, but also enhances well-being and the connection to the land.

Choosing an Early Harvest Oil means choosing authenticity, the passion for a job well done, and the purest expression of the olive groves of Jaén. It is a tribute to patience, knowledge, and respect for nature.

Each season reminds us that excellence is no coincidence: it is the result of taking care of every detail, from the field to the bottle.

Frequently Asked Questions about Early Harvest Extra Virgin Olive Oil

What does it mean for an oil to be early harvest?

This means that the olives are harvested before they reach full maturity, while they are still green. This produces an oil with a more intense aroma, higher antioxidant content, and a fresher, more complex flavor.

Why is early harvest oil more expensive?

Because the oil yield per kilogram of olives is much lower. More fruit is needed to produce the same amount of oil, and the process requires more careful and rapid harvesting to preserve quality.

How does it differ from traditional extra virgin oil?

Both are high-quality oils, but the early harvest oil is characterized by its greener, fresher, and more aromatic profile, while the traditional one offers riper and sweeter flavors.

What is the best way to enjoy it?

Plain, to appreciate its full complexity: on toast, in salads, with steamed vegetables, Iberian ham or white fish. It also enhances cold dishes and gourmet appetizers.

How long does it retain its properties?

Although its high polyphenol concentration makes it more stable, it is recommended to consume it within 12 months of packaging and store it away from light and heat.
