A cooperative exists for more than making oil: it exists to support its people and its land. This is the character of Jabalcuz® outside the bottle.
The engine of an olive-growing town
In Los Villares, olive growing is not an industry: it is the life of the town. The Sierra de la Pandera cooperative brings together hundreds of families who farm family-run estates using traditional techniques, and seeks — as stated in our principles — harmonious and sustainable development that combines the human dimension with respect for the natural and cultural resources of the Sierra Sur of Jaén.
A.L.E.S. solidarity edition
Together with the A.L.E.S. association (fighting blood diseases), we are launching a special and limited edition of Jabalcuz Gran Selección whose purpose is to support their work. A bottle with the same award-winning oil and one more reason to open it.
From Los Villares to Antarctica
In January 2026, our oil reached the most remote place where a villariego has ever had breakfast: the Spanish Antarctic Base Gabriel de Castilla, on Deception Island, to which we donated a batch of Gran Selección. Its commander-in-chief, Javier Abizanda Sánchez, wrote to us:
“We are not exaggerating when we say it is the best: every piece of toast we share here, in this remote corner of Antarctica, carries with it the flavor and quality of your work. […] It turns an everyday gesture like having breakfast into a moment of genuine enjoyment and connection with our land.”
Employment and roots in Los Villares
The cooperative provides direct work in the oil mill, the bottling plant, and the office throughout the year — not just during the harvest — and indirectly supports the crews, transporters, and businesses of a municipality of about 6,000 inhabitants. At a time when rural Spain is losing population, that 1,400 families can continue to live off the olive groves where they were born is not a figure: it is the purpose of all this.
An olive grove that preserves the sierra
Our surroundings are preserved practically untouched: the Sierra de la Pandera, the source of the Río Frío, the canyons of the Eliche River. Keeping the traditional mountain olive grove alive — the one that cannot be intensified — is the best guarantee that it will remain so for the next generation.
